Just Cookie Dough Ice Cream Sandwiches

Ingredients:

2 cups Just Cookie Dough (available at HamptonCreek.com)
1 quart ice cream, flavor of choice
1½ cups dark chocolate, chopped
1 tablespoon coconut oil (or any neutral flavored oil)
