Super Simple Chili

As I’ve mentioned before, I love vegetarian chili. But sometimes you just have to have some meat…especially when the Super Bowl rolls around! So here’s a chili recipe for those times. It’s classic chili: super simple to make and super tasty!

-1 lb ground beef
-3 15 oz. cans dark red kidney beans
-2 15 oz. cans diced tomatoes
-12 oz. beer* (whatever you have in the fridge is fine)
-2 cans water
-onion
-bell pepper
-6 tbsp chili powder
-tbsp cumin
-2 tsp cayenne pepper
-2 tsp pepper

Brown the ground beef, then put into a slow-cooker. Strain the kidney beans, then add in with the ground beef. Add the tomatoes (do not drain), beer, water, and seasonings. Chop the onion and bell pepper, then add and mix all ingredients together. Put slow-cooker on high for two hours, and then low for 4-6 hours. Serve with sour cream, cheese, tortilla chips, and extra Tabasco for those who like it spicy!

*This cooks long enough for the alcohol to be a non-issue, but if you prefer, you can use beef stock instead.
