RECIPE | Easy Creamy Tomato Soup (with Taste of Italy Essential Oil)

Since the weather ’round these parts the last few weeks has been less than stellar, we’ve been stuck in the house A LOT. Last week when the snow just started coming down and it was so gray and dreary out, I had a serious hankering for some tomato soup and a grilled cheese sandwich. I was CRAVING one.

I knew I didn’t have MUCH in my pantry so I knew I was going to have to get creative.

I just started pulling stuff out to see what could work and I ended up throwing this soup together, tasting it along the way to see how it was turning out.

Well, it turned out to be DELICIOUS and a huge hit in our house. Lilly loved it, John loved it, I loved it. It was a WIN.

I also really wanted to try a recipe using my Young Living Taste of Italy essential oil blend that I got in my February essential rewards order. It’s a blend of FOUR different oreganos and thyme… so very “Italian” inspired AND immune boosting. Woop! I added one drop at the end of the simmer-time and it was the perfect addition.

A quick, easy, and delicious tomato soup recipe to warm you up on a cold, dreary day!

Ingredients
  • 1 14oz can of tomato sauce (I use organic tomato sauce - less sodium, no additives!)
  • 1 14oz box or can of crushed tomatoes with Basil (I used Colavita)
  • 1 cup free range organic chicken broth
  • 1 cup organic heavy cream (I get mine from Trader Joes!)
  • 1 clove minced garlic
  • Dried basil, oregano, parsley, and thyme (to taste)
  • 1 drop of Taste of Italy essential oil blend from Young Living (optional)

Instructions
  1. Combine tomato sauce, crushed tomatoes, and chicken broth in a large pot.
  2. Add in the minced garlic and dried spices. Let the soup marinate and come to a simmer. Then add in the cup of heavy cream. Bring to a simmer.
  3. I let the soup simmer for about 10-15 minutes to let the flavors mesh.
  4. If you are adding the DROP (and I say one drop because it is a potent oil) of essential oil, add it at the VERY end and mix well.
  5. Ladle your soup in a bowl, add some dried oregano on top and serve with a grilled cheese sandwich, a quesadilla, or even some crackers or pita chips! Yum!
