Summer salad - Minty Bean and Walnut Salad


Since, it's getting hotter and humid by the day here in Mumbai (I'm sure same is the case with the rest of India) I've started losing my appetite. The idea of heavy warm food just does not appeal much to me. Also since it is just the two of us at home and since I decide the menu i have the liberty to make it as per my choice. Thus, I've started eating lot of salads (no not the boring rounded slices of carrots and cucumbers but a lot more interesting ones).

Here's something I made yesterday, which is super quick and easy -

Minty Bean and Walnut Salad





Ingredients
100g kidney beans (rajma) boiled
6 pieces cherry tomatoes, halved
3 tbsp grated cheese (of your choice, yes! cheese in small proportions is healthy)
5 piece of walnut, chopped
1 small capsicum chopped
3 tbsp chilli garlic sauce
2 tbsp olive oil
1/2 cup chopped mint leaves
salt as per taste

Recipe
1) Mix and toss all ingredients together
2) Refrigerate for atleast half an hour before serving so that the salad gets seasoned well and also is cool enough when served

That's how quick and easy it is to make a salad which is filling, healthy and satisfies your taste buds. Happy Eating! And stay cool this summer!
