#SMPWedding101 – Wedding Cake Tips

While there are many aspects of my wedding day I’d do anything to relive, there’s one part I’m especially craving a do-over – the cake consideration. We went with an alternative dessert that, while fabulous, left me kicking myself for not indulging in my sweet tooth with a proper cake tasting. Tip #1 | DON’T WAIT

Especially if you have dietary restrictions, don’t put off thinking about your cake. While it is often one of the last details considered in planning your wedding, bakers can book up as quickly as other vendors. If you know you are looking for something specific like gluten free or vegan, it may take a little longer to find the right vendor, so start reaching out to bakers early on, even if you wait to book tastings or make your final decision.

Tip #2 | KNOW YOUR BUDGET

Wedding cakes are almost always priced per person, but additional costs such as delivery, cutting fees, and cake stand rentals will vary from one vendor to the next, so make sure you are upfront about your budget and ask about all additional fees. Also consider whether you’ll be saving the top tier, as this will add to the cost. A good vendor should be able to give you a clear estimate, as well as suggest flavors, designs, or even cake alternatives that will work for you.

Tip #3 | LEARN ABOUT DESIGN TECHNIQUE

Understanding the differences between fondant, buttercream, and gumpaste will help you to know what aesthetic can be created with each ingredient, and how they affect flavor. Some bakers work with all mediums, while others specialize in just one. Learning about different techniques will also help you to know what your priorities for your wedding cake are, and in turn, help you to find a like minded vendor.

Tip #4 | CONSIDER THE SEASON YOUR MENU

I always ask clients what food they’re planning to serve, as I think it’s important for the whole meal to feel cohesive. Additionally, I want to be using the best ingredients with the most flavor, which usually means working with what’s in season. For example, if you’re getting married in the fall, don’t have your heart set on a cake with fresh strawberries; using out of season fruit just isn’t worth it. Instead, think about poached pears, fresh figs, berry preserves, or something richer like caramel, or chocolate ganache.

Tip #5 | KNOW THE VENUE SPACE

Have a sense of where the cake will be displayed before meeting with your baker. Knowing if the cake will be indoors or out, in the shade or sun, and if there is air conditioning will be helpful for your baker in planning delivery and set up, especially for warm weather celebrations.

Tip #6 | PICK WHAT YOU LOVE

When deciding on the flavor of your cake, don’t spend too much time worrying about what is going to appeal to all of your guests, or you’ll end up with something basic and uninspired. Instead, go with what you love; if you think it’s absolutely delicious, I promise your guests will too!
