Homemade Jalapeno Garlic Pickled Beans

These green beans are my first pickled project possibly ever. I love a pickled anything by no means everyday, but now and then a dill pickle, pickled carrots on a taco or these spicy garlicky green beans hit the spot. I really just like saying the word pickle because anything that rhymes with tickle makes me smile. Exemption: Sickle.

The true inspiration came from having a wonderful cheese plate the other day and I thought I want to have a picnic with a great spread of cheeses, veggies, and pickled green beans. What is great about these pickled green beans? They are not fickle and easy to make, a piece of cake… Mmm, cake!

Jalapeno Garlic Pickle Green Beans

Need:

  • 1 pound very fresh green beans (nice and crisp), ends trimmed
  • 1 Jalapeno (washed and chopped)
  • 5 cloves of peeled garlic
  • 2 1/2 cups of White Vinegar
  • three tablespoons of of raw sugar
  • 2 1/2 cups of water

How:

After you washed, trimmed and chopped your veggies. Place them in a sterilized mason jar, in a sauce pot add vinegar, sugar and water cook over medium heat till a boil. Pour into mason jar over the veggies. Allow the jar to cool down, cover and tighten your lid. Place in fridge. Ready to eat in two days.
