Sip It :: Rosemary Lemon Sparkler

We spent the past weekend up in a cabin (in an effort to find some post-holiday downtime and just chill) which resulted in several amazing things: long hikes, snow sledding, making our own dreamcatchers (check them out on Instagram here!), and the development of a wonderful new cocktail.

I was tempted to call it the “Cabin Cocktail” but that really only means something to me. It would make no sense to you. So, let’s call it what it is —a Rosemary Lemon Sparkler.

The overall taste is fresh but woodsy. Which perfectly describes the mountain air.

What makes this drink special is the additional step while making rosemary infused simple syrup. Don’t worry, it’s a super simple step (and it totally makes all the difference in flavor).

I love anything with a little bubble, so the fact that this recipe includes prosecco is perfect (you can also use a dry champagne if you prefer).

It made for the perfect front porch cocktail hour.

Rosemary Lemon Sparkler

(recipe makes one drink)

1 ounce rosemary simple syrup (recipe below)

1 ounces freshly squeezed lemon juice

Prosecco (or dry champagne)

1 sprig of rosemary, to garnish

Pour the rosemary simple syrup and lemon juice between in a glass. Fill the rest of the glass with prosecco. Stir and then garnish with a sprig of rosemary.

To make rosemary simple syrup: In a saucepan combine 1 cup sugar, 1 cup water, and about 4 sprigs of of fresh rosemary. Bring to a boil, stirring occasionally to dissolve the sugar. Boil for one minute, then remove from the heat and let sit to cool. Strain mixture into a small glass, removing the rosemary. Place in the refrigerator to chill before using.
