Peanut Butter Stuffed French Toast


The other day I was pressed for time and literally was going to reheat some leftover pasta for the kids before we had to zip off to school to drop my son off to track. Fifteen minutes after track ends, confirmation classes begin. So, I need to feed the kids before we leave for track practice since I cant' run back home in between the two. The kids groaned when I said leftover pasta and I was left standing in front of the fridge wondering what I could whip up.

My daughter shouted French Toast . . . knowing that I had just purchased some Texas Toast and I do have the BEST French Toast Recipe EVER. I replied, but I was going to make that Friday morning for breakfast. They all started chanting French Toast, so French Toast I was making.

The thing about French Toast is that it is super easy to make and super fast. Literally, like 10-15 minutes start to finish. Since my son was heading to track, I really wanted to add some extra protein in there for him, so I grabbed the jar of crunchy peanut butter as well. (you do know that one serving of peanut butter contains eight grams of protein, right? Perfect boost for your energetic kids and for this very, tired momma)

Anyway, I whipped up the eggs and milk and "stuff" quickly, soaked the bread and set to frying the bread. I quickly slathered on some crunchy peanut better between two slices, cut them in half, poured some maple syrup on their plates and I was done.

The kids were looking at me like I had lost my mind. Peanut Butter stuffed in between their French Toast? Trust me, I said and took a big bite of mine. I can not even describe to you how delicious the combination is. The peanut butter melts in between the two slices of french toast and the syrup adds just the right amount of sweetness. Delish!

Peanut Butter Stuffed French Toast

Instructions

  1. Whisk eggs together in a medium bowl until smooth.
  2. Whisk in milk, vanilla and cinnamon. Pour into a shallow pan or bowl that is wide enough for your bread.
  3. Dip bread slices in egg mixture letting sit for a 15-30 seconds until mixture is absorbed.
  4. Carefully transfer to soaked bread into a hot pan that has been sprayed.
  5. Cook bread on each side until golden brown. (Be sure your french toast is crispy, you don't want soggy bread on the inside)
  6. Spread crunchy peanut butter on each slice of bread. Serve as a sandwich.
  7. Drizzle with maple syrup and dust with powdered sugar. Top with your favorite fruit.

Ingredients

  • 1 cup organic whole milk
  • 4 organic eggs
  • 2 tsp organic pure vanilla extract
  • 1 tsp organic ground cinnamon
  • 4-6 thick slices bread
  • Organic crunchy peanut butter
  • Organic Real Maple Syrup (optional)
  • Confectioners' sugar (optional)
