Individual Plum Cakes (Vegan + GF) and Plum Wood Tablespoons!

You might remember a while ago I posted about some lovely tablespoon measures carved by Barnaby Carder a.k.a. Barn The Spoon. Well I’ve got a restock in my shop so anyone who missed out last time can grab one . This time they’ve been crafted from English plum wood so are slightly different to the last batch which were sycamore. It felt fitting to therefore make a small batch recipe using plums to suit the wood!

Pretty much the only time I’ve ever eaten plums has been in tart form – a base of ultra tender, almond pastry (this one, actually!) layered with frangipane (a buttery, almond scented batter) and sliced fruit. It’s that pairing of the fragrant almond extract and tart plums that gets me so I had to use it here.

I riffed on the idea of my individual blueberry cakes but made it single serving recipe plus used the ALL THE ALMOND INGREDIENTS: butter, ground, flaked, extract.

No vitamin E deficiency here, mate.

I decided to join the frickin chia seed bandwagon and used them as a thickener for the juicy fruit layer in lieu of cornstarch/flour/arrowroot. I feel so fancy.

The whole recipe is measured, appropriately, in tablespoons! So all you really need is a 15ml measure, a knife and a mixing spoon as your tools. Oh and a cutting board for preppin dem plums.

I guess the cutting board is optional but this one is so pretty (I’m probably a bit biased because my mum made it) sooo I had to use it! Barn introduced me and my mum to The Greenwood Guild who host workshops at Stepney City Farm and invited us over to make a cutting board. If making our own pretty props wasn’t leverage enough, when we visited we also got to see 1 week old baby goats!!! Uhhhhh I think it’s illegal to turn down seeing baby goats.

If you’ve ever wondered what making a cutting board is like: My mum designed the shape following the natural grain of the wood, planed both sides and the cut edges with 3 different wood planes, cut out the shape and planed some more! It took a while but it was worth it as now I have a beauty of a cutting board for uni!

Anyway, let’s get to the recipe. But first an emergency BABY GOAT INTERMISSION:

Okay now you can have the recipe

Print Individual Plum Cake (Vegan GF)
2 plums 1/2 tsp chia seeds 2 tbsp apple juice
For the cake: 1 tbsp almond butter 1 tbsp almond milk 1 tbsp date or maple syrup 2 tbsp ground almonds 1 tbsp quinoa flakes or rolled oats (GF if needed) pinch of baking powder (GF if needed) splash of almond extract flaked almonds

Pit and dice the plums. Combine them with the chia seeds and juice in an oven proof ramekin or mug. You might need to drizzle some date/maple syrup in with the fruit depending on ripeness and flavour preference but I found the apple juice added enough for me.

Stir together all cake ingredients except the flaked almonds in a small bowl. Spread mixture over the surface of the plums. Decorate with flaked almonds and bake for 15-20 minutes in an oven preheated to 350ºF (180ºC) until golden. Serve warm.
