This recipe holds a special place in my heart. Not only is it a recipe via my mom that I grew up eating and loving, its also the FIRST recipe that I ever posted on Go Go Go Gourmet! I recently did a reshoot of it, since I’d like to think that my food photography has grown since then. The pictures (and the dinner) turned out so well that I knew it would be a great recipe to share with all of you! Even better, all the ingredients (minus the fresh chicken) are staples on my Pantry Checklist!

Chicken Cacciatore

Go Go Go Gourmet for The Wise Baby

  • 2 tablespoons olive oil
  • 2 medium onions, cut in ¼ inch slices
  • 2 cloves garlic, minced
  • 1 chicken, cut up into 8 pieces
  • 1 16 oz can tomatoes, cut up
  • 1 8 oz can tomato sauce
  • 1 teaspoon salt
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • ½ teaspoon celery seed
  • ¼ teaspoon pepper
  • 1 or 2 bay leaves
  • ¼ cup dry white wine
  • Hot cooked rice
  • Parsley, for garnish
  1. In a large, deep skillet over medium heat, heat the olive oil to shimmering. Add the sliced onions and saute until softened, then add the garlic and cook for another 2-3 minutes. Remove from skillet to a bowl and set aside.
  2. Season the chicken with salt and pepper, then place skin side down in the skillet to brown. Do not overcrowd the skillet, work in batches if necessary. Flip the chicken and repeat.
  3. In the bowl with the garlic and onions, add the tomatoes, tomato sauce, and spices. Stir to combine.
  4. Return all chicken to the skillet and pour the tomato mixture over top. Cover and reduce heat to medium low. Simmer for 30 minutes.
  5. Pour in the wine and simmer, covered, for another 15 minutes.
  6. Serve on top of hot buttered rice and garnished with fresh parsley.
