Snowing poodles

I’m sitting inside and it’s snowing “cats & dogs” outside, hehe… Little fluffy poodles. Anyway, me and Aiden dropped Jon off at school this morning. We were suppose to go on a little grocery store tour to pick up some weekly offers from around the local stores. Thought it would be worth it. Normally I think it’s silly reasoning going around store to store for specific offers as you need to take the cost of petrol into account. But this time it would have been worth it (I think) as Jon didn’t take the bus today which also costs money, and some of the offers were on organic items which can be quite expensive as you know. It was artichokes and parsnip – perfect for some baby food.

But as the weather was acting up like this, I decided to just go home. So here I am, a bit low today – probably because Aiden was back to his old sleeping tricks last night. I think I know why though, so hopefully it’s just a one-time thing.

I was really excited about this week, and now I just feel like sleeping the whole day. But I can’t even do that as Aiden is awake. And I “have to” workout today, but I don’t feel like it at all. AT ALL. So that’s probably what I need to force myself to do to get this week back on track. One really sweet thing today though was that I’ve lost 4 kgs so far on this plant-based diet challenge and it’s not even particularly hard. Since I’m not building muscles at the moment, I’m paying a bit of attention to the scale and it’s nice to see it moving again (downwards, that is). I do measurements as well, as your weight can be a bit misrepresentative. The best thing though is my wardrobe is slowly starting to fit me again.

So I’m halfway through my Plant-based diet challenge. Yep, not much more to say. I eat salads and soups. A few times I’ve amended old favourite recipes. I really love Chicken Campagnola for example. Had it in South Africa first time and when I got home Googled a recipe and it’s just SO EASY to make. Having just a few ingredients, it’s a bit funny having to remove one completely (chicken) and replace cream. But guess what, it was very nice. The flavours were there still. I used oat cream. And not eating any white carbs (bleached, processed and sugary reasons) I replaced spaghetti with zucchini spaghetti (my favourite spaghetti substitute to date).

I do love my spaghetti… but I know it’s really, really bad for you. And replacing it with Zucchini pasta is actually not bad at all. I see the day when I will prefer it to “normal” pasta as well.

This morning on “The Talk” they had a vegan chef over. Exciting, I thought. Boring, it was. She made wheat balls in sauce and spaghetti. Oh how revolutionary!


I had this on the weekend. Thai veggie burgers, Thai dressed salad, avo, fried onion and sweet potato fries on the side. Mmm…
