Loaded Ranch Potato Salad


When I was growing up I really wasn’t a fan of potato salad. My mom always used to buy the store bought version and I never liked it. I would always eat macaroni salad or coleslaw instead. When I was in high school my mom convinced me to take a culinary skills class. I really didn’t want to take it, but I ended up loving it because each week we got to make food. One week our teacher told us that we would be making potato salad. I was really disappointed because I didn’t like potato salad. Since I put all that time into helping to make it, I tried some and actually liked it. There was a huge difference in taste for me between homemade potato salad and store bought.
A few years ago my mom found a recipe for potato salad off a jar or box (she thinks it may have been the jar of mayo). She started making this recipe during the summer and I really liked her potato salad. I still don’t eat store bought potato salad but will eat my mom’s homemade potato salad. I love how potato salad is a great summer food and great for barbecues, picnics, and parties. I decided to ask my mom for her recipe and thought it would be really hard. The potato salad was actually not hard at all to make and I decided to make the recipe even better by making it ranch flavored and adding cheese, bacon, and chives.
This Loaded Ranch Potato Salad was amazing and was devoured at the party we brought it to. This potato salad is a notch up on the traditional homemade potato salad by adding cheese, bacon, and chives and making it ranch flavored. I really loved the ranch flavor and loved the addition of the cheese, bacon, and chives because they give the potato salad great flavor.
Plus this isn’t really hard to make, you just have to boil the potatoes and mix everything together. This is my new favorite potato salad recipe and I plan on making this many times. It is great for picnics, parties, barbecues, or just because. I hope you enjoy this fantastic potato salad.

Loaded Ranch Potato Salad

Ingredients

  • 4 cups red potatoes, cubed
  • 1 cup mayonnaise
  • 2 tablespoons vinegar
  • 1 1/2 teaspoons salt
  • 1 teaspoon sugar
  • 1/4 teaspoon black pepper
  • 2 tablespoons ranch dressing seasoning powder
  • 1/2 cup bacon, chopped
  • 1/2 cup shredded cheddar cheese
  • 1 tablespoon fresh chives, chopped
  • Additional bacon, cheese, and chives for garnish (optional)

Instructions

  1. Boil the potatoes for about 10 minutes or until tender. Once the potatoes are done rinse them off in cold water.
  2. Meanwhile, add the mayonnaise, vinegar, salt, sugar, black pepper, and ranch seasoning to a large bowl and stir together. Once the potatoes are done add them in and stir to combine. Then add the bacon, cheese, and chives and gently stir until combined.
  3. Refrigerate the potato salad until ready to serve.

Notes

You can use any kind of potato. I chose to use red potatoes because I like them and then you don't have to worry about peeling them.

To make this take quicker, boil your water while you are cutting the potatoes, then once it boils you will be ready. Then mix the other ingredients together while the potatoes are cooking.
