apple, gruyere & golden onion grilled sandwich


Matthew and I are all about the grilled cheese sandwiches! We love them so much that sometimes we'll have them for lunch and dinner! I've been on a roll lately with making them for dinner alongside soups or salads. After going apple picking last weekend we have a plethora of the fruit at our disposal so I thought it would be good to add it into a grilled cheese sandwich. I love caramelized onions but didn't have time to make them so golden onions it was. You can do either though! Or if you're not an onion lover, feel free to leave them out!

Apple, Gruyere & Golden Onion Grilled Sandwich
makes 2

INGREDIENTS
4 slices of rustic, seeded bread
1 Tablespoon olive oil
1/2 onion, thinly sliced
1 teaspoon fresh rosemary leaves, minced
1 teaspoon white-wine vinegar
1/4 apple, thinly sliced
2 ounces Gruyere cheese, sliced

DIRECTIONS
In a heavy skillet, heat olive oil over moderate heat until hot. Add onions and rosemary, stirring so they're completely coated in oil and cook until golden about 10-15 minutes. Stir often so onions don't burn too much. Stir in vinegar and a pink of salt. Cook until vinegar is completely evaporated. Set aside.

Butter back sides of bread (so that it toasts in the pan). Stack with Gruyere cheese, golden onions and apple slices. Top sandwiches with bread and butter the tops. In another heavy skillet (or clean out the one you used with the onions), add sandwiches and heat over moderate heat. Cover with skillet lid if possible to trap steam and allow cheese to melt more quickly. Turn after 3-4 minutes when underside is browned. Cook until both sides are browned. Remove from heat and cut into halves. Enjoy!
