Mini Blueberry Protein Muffins
INGREDIENTS
Dry Ingredients ½ scoop vanilla protein powder (I used Giant Sports) 1/3 cup oat flour 3 Tbsp. almond meal flour 4 Tbsp. granulated stevia ¼ tsp. baking powder ¼ tsp. salt
Wet Ingredients 1 egg white 1 Tbsp. coconut oil, melted 2 Tbsp. unsweetened applesauce 2 Tbsp. unsweetened almond milk 2 Tbsp. sugar-free maple syrup ¼ cup blueberries
INSTRUCTIONS
1.) Preheat oven to 350 degrees. Place 8 mini silicone cupcake liners on a baking dish. 2.) Combine all dry ingredients in a medium sized mixing bowl. 3.) In a separate small mixing bowl, whisk all wet ingredients, except blueberries, together until smooth. 4.) Add wet ingredients to dry ingredients and mix with a hand-held mixer on low speed until thoroughly incorporated and smooth. Stir in blueberries. 5.) Evenly distribute batter among mini cupcake liners. 6.) Bake in pre-heated oven for 15-17 minutes or until batter is set and muffins are slightly golden brown on the top. Makes 8 mini muffins
