breakfast criminals: raspberry nectarine pitaya smoothie bowl

While the weather here in NYC starts feeling like fall and Central Park turns into a wonderland of leafy colour, I’m grabbing every last opportunity to treat myself to a refreshing superfood smoothie bowl before bringing back warm breakfasts. My most recent creation, the Raspberry Nectarine Pitaya Bowl, is one of my all-time favourites and is, if I do say so myself, sensational.

For ages doctors have been telling us that it’s healthy to eat colourful foods. I haven’t encountered a fruit or vegetable more colourful than pitaya—or dragon fruit, so it’s really not surprising that it has incredible health benefits. While fresh dragon fruit has long been readily available in most tropical countries, it’s also becoming more accessible as smoothie packs in Western countries, too (at least in the U.S. and Canada).

Abundant with Omega-3 fatty acids (which have anti-inflammatory properties), antioxidants, monounsaturated fats, vitamins, minerals, enzymes and fiber, pitaya is also known as a beauty-enhancing fruit. Despite its bright magenta colour, the taste of pitaya is pretty mild, with pear- and strawberry-like notes that pair deliciously with most other fruits.

I used mostly ingredients from my local farmers market for the ultimate fresh taste combined with frozen pitaya, but you can play with what you have available and make it your own. Wholesome nourishment is a form of self-love. Join me in giving yourself some fuzzy, kind, gentle love today. Until you give it to yourself, you can’t fully give it to others.

RASPBERRY NECTARINE PITAYA BOWL

raw, vegan, gluten-free, soy-free, dairy-free, refined sugar-free

Ingredients to blend:
1/2 cup frozen raspberries
1 Pitaya Plus smoothie pack
1 frozen banana
1/2 nectarine
2/3 cup coconut water
1 tsp powdered probiotic, optional (I’m in love with this yummy Sunbiotics raw probiotic with superfoods)

Topping:
Raspberries, banana, nectarine, granola, coconut chips, almond butter, goji berries
