Cooking & enjoying dinners outside is rewarding in so many ways! It’s an opportunity to take in some fresh air, enjoy a little sunshine & watch the kids play while I cook. It’s also a great way to eliminate the usual cleanup! I adapt many of our dinner standards in spring, summer & early fall for the grill. The grilled cheese is no exception! I make grilled cheeses in a variety of ways, but today I’m sharing my go to “recipe.”
The key to a great grilled cheese is great bread. Sourdough is always delicious! Another grilled cheese must is fresh grated cheese. Choose a variety that melts well {gruyere, gouda, swiss & cheddar are all favorites}. Pre-grate your cheese in a bowl – believe me, it’s worth the 3 extra minutes. Block cheese is always a higher quality than pre-shredded cheese & it doesn’t dry out.
The kids love it! I make theirs on standard white bread with American or cheddar. In fact, Isla was eating one while hanging on my leg during the taking of this photograph & Dusty attempted to take off with another.
