Aglio e Olio

Lately, I’ve been feeling overwhelmed. There are so many decisions to make on our home & one effects the other. I’m anxious to settle in, but all good things take time, & this is no different. It should come to no surprise that I have been wanting to make some effortless dinners. More & more, that’s my cooking style. I’d rather spend an extra half hour watching the girls parade around the driveway on their bikes, scooters & cars than in the kitchen. That’s what winter’s for! There are so many fresh, skinnier dishes that can be made in just a few minutes. Aglio e Olio is just one of my favorites. It consists of just a few staple ingredients, also saving me a run to the grocery store. See, effortless!

Ingredients
  • 4 Tbsp olive oil
  • ¼ c garlic, diced
  • ¼ tsp dried peperocino or dried red pepper {not crushed in your typical spice jar}
  • ¼ tsp salt
  • ¼ fresh parsley, chopped
  • 1 c fresh grated parmesan
  • 1 lb pasta

Instructions
  1. Boil a pot of water & prepare pasta.
  2. In a medium saucepan, add olive oil & garlic over medium heat. Cook for 1 minute.
  3. Add dried peperocino/red pepper & allow it to cook for 1 minute.
  4. Add 2 cups pasta water & reduce for 3 minutes. Toss in pasta & top with parmesan & parsley.

As with many of my favorite pasta recipes, you can serve this dish as is or add chicken, shrimp or scallops.

I have to warn you, my move to St. Louis has only added to my fondness of pasta. I look forward to incorporating some fall flavor soon! Are you ready for fall?
