Just One Cookie

Have you ever wanted just one cookie? Yeah, neither have I. Sometimes I’ll make a batch of cookie dough in hopes that I’ll have just one & save the remaining dough in the freezer for a rainy day. Or a cloudy day. Even sunny days. This recipe is for when you want just one cookie, & a bite or two of dough along the way. Sometimes, I just need a little something sweet without blowing my entire week of calories. It’s also great if you want to make just one peanut butter cookie cobbler. This recipe provides both portion & dish control. I make it start to finish in just one little bowl. Perfect for hiding the evidence

peanut butter…

flour, baking soda, salt & chocolate chips

Serves: 1
Ingredients
  • 1 Tbsp butter
  • 1 Tbsp beaten egg
  • 1 Tbsp sugar
  • 1 Tbsp brown sugar
  • 1 Tbsp peanut butter
  • ⅓ tsp vanilla
  • ¼ tsp salt
  • ¼ tsp baking soda
  • ¼ c flour
  • ¼ c chocolate chips

Instructions
  1. Preheat oven to 350 degrees.
  2. Soften butter in small dish in the microwave {20-30 seconds}
  3. Add egg, sugar, brown sugar, peanut butter & vanilla. Stir.
  4. Add salt, baking soda, flour & chocolate chips. Stir well.
  5. Optional: roll in brown sugar & top with crack with sea salt. Make a criss cross shape with fork, pressing down gently.
  6. Bake 13 minutes or until golden brown.
