Easy Apple & Cheese Soup

I hope you’re still loving apples as much as I am this season. I’m still creating ways to use our bounty from our afternoon of apple picking last weekend. We’ve made apple bread, apple tarts, tossed them in salads, & created centerpieces with them. I find inspiration for projects & recipes in the most unlikely places – like a box nestled in a back corner of a basement. I was at an estate sale with a friend when I found some adorable glass apple dishes at – I couldn’t resist! They inspired me to make a apple & cheese soup! I was immediately reminded of the Melting Pot’s fabulous cheese fondue, served with Granny Smith apples. It’s one of my favorite combinations, so I used a couple of my favorite cheeses, soup basics & woila! A fabulous & easy apple & cheese soup! Our family ate every last drop of it.

This recipe takes slightly longer than most of mine {usually 10 or 15 minute dinners}, but it’s not all hands on time. It is really easy & did I mention, cheesy? Mmm!

Serves: 6
Ingredients
  • 6 tsbp butter
  • ½ red onion, chopped
  • 2 apples, peeled, cored & diced
  • ¾ c flour
  • 4 c chicken broth
  • 1 c milk
  • 1¼ c white cheddar
  • 1 c gruyere
  • fresh cracked salt & pepper to taste
  • bacon pieces

Instructions
  1. In a large saucepan or pot, melt butter over medium low heat. Add onions & cook 10 minutes or until soft.
  2. Add apples & cook 10 minutes.
  3. Gradually add flour. Cook 5 minutes, while stirring periodically.
  4. Whisk in broth & increase heat to medium high to bring to a boil. Reduce to medium low heat, cover & simmer for 10 minutes.
  5. Add milk, bring to a boil & add cheeses. Stir until melted. Add bacon pieces, salt & pepper to taste.
