Chocolate Cobbler

Years ago, when we lived in Columbia, Missouri, Chris & I would frequent Mackenzie’s. It was a hidden gem in the midst of a not-so-busy strip mall. Completely unassuming, we walked in one evening for dinner & visited at least once a week for the remainder of our time in Columbia. The aroma of the wood-burning grill alone was enough to keep us returning, but everything from the salad to dessert was dream-worthy! Now, it’s a 2 hour drive to Mackenzie’s. While I think it would be worth it, it’s just not a feasible to travel with the family for dinner. For years, I’ve been recreating their chocolate cobbler & reliving those nights in our twenties. In fact, we prefer to enjoy our dessert at home. All too often I embarrass Chris by asking the server if their dessert is house made. When we’re lucky enough to receive a “yes” response, it’s usually disappointing. I like to make every.calorie.count. This chocolate cobbler recipe does – & of course, it’s unbelievably easy! I like to prep it in the afternoon, refrigerating the dough until dinner is complete & then putting it in the oven for a piping hot decadent dessert.

This recipe inspired my marshmallow & peanut butter cookie cobbler & salted caramel cookie cobbler desserts. I highly recommend you try them ALL!


Print Chocolate Cobbler
Ingredients
  • 1 stick butter, melted
  • 1 c semi-sweet chocolate chips
  • 1 c packed brown sugar
  • 2 eggs
  • 1 tsp vanilla
  • 1 c flour
  • ¼ c cocoa
  • ½ tsp salt
  • brown sugar

Instructions
  1. Preheat oven to 350 degrees.
  2. In a saucepan on low, melt butter & chocolate chips, stirring until smooth {about 5 minutes}.
  3. Remove from heat & add brown sugar.
  4. In a mixing bowl, beat eggs & vanilla. Add chocolate mixture.
  5. Add flour, cocoa & salt. Mix well.
  6. Grease oven safe dishes, preferably small creme brûlée dishes. Pour batter in & top with brown sugar.
  7. Bake 12-15 minutes based on your dish size, but be careful not to over bake. It should have a slightly gooey center.

Oh, I should mention that I like to serve it a la mode? Try custard or salted caramel for fall & peppermint ice cream for winter. Yes, peppermint ice cream. You’re welcome. I frequent the ice cream aisle every year anticipating it’s arrival! I have no shame.
