The Best Cheesy Corn

I’m not sure how I escaped 6 years in Kansas City without a love for barbecue, but I’ve never really cared for it. Any time we had guests in from out of town, they wanted to experience the barbecue. I can’t blame them, I love doing the same when I travel! I’ve made a meal on anything-but-barbecue during our time there. Oklahoma Joe’s has the best french fries. Seriously. I could live on them. Another local favorite is Jack Stack, which has the best cheesy corn, hands down. Well, except mine.I realized years later that they share their recipe on their website. When it comes to all thing cheese, I’m almost an expert. Dare I say my version is creamier? I’ve called cheesy corn dinner a number of times – it includes all but one of the food groups, can you blame me?

Ingredients
  • 2 cans of corn, drained or 8 ears of corn, boiled
  • 8 oz velveeta, cubed
  • 4 oz cream cheese, cubed
  • 3 Tbsp butter
  • 2 tsp minced garlic
  • ⅓ lb/1 thick slice of ham, cubed

Instructions
  1. In a pan on medium heat, add all but the ham. Stir until melted.
  2. Stir in ham & serve.

Another notable difference in this recipe is that I don’t bake it. Oven space is always a commodity at our house during the holidays & I love the quick fix of a vegetable in just 10 minutes. Oh, I should also mention that this is incredible when served as a dip with tortilla or corn chips.
