Easy No Bake Trail Mix Cookies

A few years ago, a few of my great friends & I ventured an hour outside of Kansas City for a day at the wineries. For the drive, my friend Kathryn packed her snack mix – it was so simple, but completely amazing. I couldn’t get my hand out of the bag. Thankfully, it was a short trip. Since, I’ve been mixing up her trail mix. The other day I saw Dessert for Two share a photo of haystack cookies. It’s been years since I’d had them, but once I saw that photo, it was all over. I had to have them now. I adapted the traditional haystack cookie recipe with the ingredients in my favorite trail mix – butterscotch chips, peanut butter {versus peanut butter chips}, sesame sticks, peanuts, pretzels, Chex, peanut butter m&m’s & marshmallows. The result was delish! As I continue with the 12 Days of Cookies, I’m sharing the recipe for my no bake trail mix cookies.


No Bake Trail Mix Cookies

Ingredients
  • 1 ¾ c butterscotch chips {package}
  • ¾ c peanut butter
  • 1 c sesame sticks
  • 1 c peanuts
  • 1 c pretzel sticks
  • 1 c chex
  • 1 c marshmallows
  • 1 c peanut butter m&m’s

Instructions
  1. Line cookie sheets/platters with parchment paper {must fit in your refrigerator}
  2. In the microwave, combine butterscotch chips & peanut butter 30 seconds at a time until smooth, stirring intermittently.
  3. In a separate bowl, combine remaining ingredients. Stir in peanut butter mixture until well combined.
  4. Drop mixture by the spoonful onto cookie sheets & refrigerate until solid - about an hour.
