12 Easy Breakfast ideas on the go

Every single day of the week we pick the same routine and your rumbling stomach will blame you for it afterwards. It might sound familiar: getting up a little too late because you’ve been hitting the snooze button sixteen times again, showering in 5, getting a mini-panic attack by glancing at the clock, preferring getting dressed, doing your make-up and hair over eating some highly necessary breakfast aaaand off you go. An hour later you feel hungry as a hunter.

Time do change this chaotic beginning of the day by sitting down and enjoying some healthy snacking. We’re fan of these breakfast recipes at the office and they’re under 10 minutes each!

1. Avocado & Egg Bruschetta
This morning get-me-up will be sure to keep you on your toes till lunch. How to? Toast two slices whole grain bread and then butter sparingly, cut avocado into thin slices and poach two eggs in a pan (like will take some mastering), afterwards, assemble and sprinkle with pepper and salt, there you have it, voila!

2. Healthy Morning Glory Muffins
An oat-based muffin is the perfect long term energy solution, this muffin’s packed with healthy carrots and zucchini, lightly sweetened with raisins and just a pinch of sugar will make a perfect breakfast or snack. How to? Use a mini-muffin tin for smaller portions, and eliminate or cut back on the brown sugar or choose a healthier substitute to cut back on sugar.

3. Fruit and Yogurt Smoothie Heaven
This simple and delicious recipe will be your best friend during the morning rush. How to? Blend 1 cup plain Greek yogurt with 1 cup frozen fruit (banana and berries work very well) with ½ cup liquid (milk, juice, coconut water — whatever you fancy). Freeze overnight and thaw throughout the day to enjoy in the afternoon, or just blend it up in the morning.

4. Quinoa Fruit Salad
Spice up a plain old fruit cup with a scoop of superfood quinoa. How to? Toss the whole shebang around until the quinoa is evenly distributed through the fruit. Add a scoop of plain yogurt and a drizzle of honey for a little extra body.

5. PBJ Waffle
Why not try this sweet and delicious (and healthy-ish) take on a classic breakfast sandwich the next time eating on the go. How to? Prepare 1 whole-grain toaster waffle and slice in half. Spread with 2 tablespoons nut butter and layer 2-3 sliced strawberries on top in place of the traditional jelly (to cut down on sugar).

6. Fruit Soup
There are just two ingredients in this tasty, cool and quick snack: Cold fresh fruit, and cold milk. How to? Chop 1 cup of fruit of your choosing (peaches, plums, berries, and mango are all great choices) and combine in a container with ½-1 cup milk of choice. Store chilled.

7. Microwaveable Scrambled Eggs with Veg
Yup, it is possible to make really good scrambled eggs in the microwave. How to? Beat 2 eggs, throw in a microwave-safe container, add 1 handful of your favourite vegetables (cherry tomatoes and spinach leaves work well), and a sprinkle of cheese. Microwave the mixture for 30 seconds, stir, and cook another 30 seconds, or until the eggs are solid. Eat in one sitting, or save in a plastic container for later.

8. Fruit and Yogurt Parfait
One of the easiest, healthiest, and tastiest breakfasts out there is a classic fruit and yogurt parfait. How to? The best bit is that it can be made with every topping, from fruit to cruesli – to an unhealthier option of chocolate. When choosing fruits, try choosing fruits that are in season locally for the most tasty options.

9. Pumpkin and Granola Parfait
This one’s perfect to try out as fall sets in. How to? In your favorite small Tupperware container (with a reliable lid!), top plain Greek yogurt with canned pumpkin puree and a handful of granola, then sprinkle with cinnamon. The best part? Pumpkin is a bonafide superfood rich in beta carotene, which is essential for eye health.

10. Oatmeal Squares
Cookies for breakfast, can I hear a hell yeah? Oatmeal is a great option for a hearty snack or breakfast, but what’s the best way to make it into a more convenient and portable snack? Bake it into squares, portable for work!

11. Apple Surprise
This dish is a perfect pick for apple season. How to? Cut 1 apple in half and remove the core (plus a bit of the extra flesh around the core). Drop 1 tablespoon nut butter between the two holes, and sprinkle in 1 tablespoon granola. Wrap up the entire apple in plastic wrap or foil to save for later, or consume all now, favourable.

12. Frozen Nutty Banana
This breakfast is bananas! How to? Cut 1 firm (but ripe) banana in half and un-peal. Arrange the banana on a small baking sheet or freezer-safe plate and spread each half with 1 tablespoon almond butter evenly, stop from touching the sides. Then – here’s the best part: Stick whatever toppings you like on top of the almond butter. Insert a popsicle stick or skewer into the cut end of each half, and freeze until solid (at least 2-3 hours). Now – devour.
