With all the gorging that occurred over the holidays, it's a miracle I could even look at another cookie. But I felt left-out from holiday baking and wanted to make a cookie of my own - one a little lighter than the chocately and spicy treats being served all December. Shortbread, although consisting mostly of butter, is a light treat to enjoy with a late-night cup of tea. And with a hint of
