Egg, Sausage & Cheese Breakfast Sandwiches



Ready to go frozen vegan breakfast sandwiches are hard to find. They are also expensive per sandwich when you can make them a lot cheaper yourself. If you like to have something quick to grab in the morning, my recipe is for you! They came out juicy and even my meat eating husband eats them.

INGREDIENTS: 2 blocks firm tofu Turmeric Salt & pepper Garlic powder Olive Oil 12 English muffins 12 frozen vegan breakfast sausage patties Vegan cheddar slices or shreds
ALSO NEED: Foil and freezer bags
DIRECTIONS: 1. Wrap tofu blocks in paper towels or a clean kitchen towel. (I cannot do this because cat hair is always in my laundry!) Lay something heavy and flat on top until most of the water has been squeezed out. I used a plastic container with a pyrex bowl full of soup cans on top. Heavy books would probably work too. 2. Slice up tofu into 12 pieces. Cutting a block in half and then cut each half into thirds works. 3. In a small bowl, mix together a couple dashes of turmeric, salt, pepper, and garlic powder. Give your tofu a light dusting in the bowl. Not too much because turmeric can overpower the recipe. I patted my little tofu's to give them a light coating. 4. Heat up a couple tablespoons of olive oil in a large pan on medium high heat. Throw in the tofu slices and cook each side for 3-5 minutes or until they are browned up a bit. 5. Assemble your magical breakfast sandwiches! I did sausage patty, cheese and then "egg". If you are going to eat the sandwich right away, cook the sausage patty according to the directions on the package and broil the cheese on top in the oven. 6. I like to put mine away in the freezer for grab and go breakfast. Wrap each sandwich up in foil and throw a bunch into freezer bags and put it in the freezer. 7. When you are ready to feel like vegan royalty in the morning, throw an unwrapped frozen sandwich (wrap in a paper towel or napkin) in the microwave for 2-3 minutes or until heated all the way through, let cool and enjoy! - - - - - - - - - - - - - - - - - - - - - - - - - - - - - - - - - - - - - - - - - - - - - - - - - - - - -
