The Sexy Sugar Free Vegan Project: Kale, Quinoa + Green Olive Salad

Now that we've discovered the nutritional powerhouse that is kale, its time to try some super natural salads! Unfortunately, my photograph really doesn't do this salad justice. Nevertheless, it is one of my favourite easy dinners. I eat it all on its own, or you can add it to a wrap with grilled tempeh or tofu. Another thing that works great is to stir the salad through some hot spelt pasta or chickpeas tossed in olive oil for that extra protein kick.

Kale, Quinoa & Green Olive Salad
(serves 4)
1 bunch of kale, trimmed
1/2 tsp fine crystal salt
1 cup tri-coloured quinoa
1/2 cup hulled hemp seeds
1/2 cup sliced green olives

creamy avocado dressing
2 ripe avocados
2 tbsp lemon juice
1/2 tsp each of onion, cumin, chili and garlic powder
1 tsp tamari
1/4 cup olive oil

method
Trim the kale stems, wash and chop into small pieces. In a mixing bowl, add the salt and start to massage the kale with your (very clean) hands until it begins to wilt – kind of like sauteed spinach. Add the hemp seeds, quinoa and green olives to the bowl and toss to combine.

Blend the ingredients for the dressing together in a food processor, or stir vigorously with a fork, until a creamy consistency is reached. Use your hands to mix and massage the dressing into the salad. Serve with an extra splash of olive oil, if desired.
