I'm always scouring the web for new recipes to try, and one of my favorite pit stops is
The Pioneer Woman's blog. I love Ree's step by step photos, and easy to understand recipe directions. Her recipe for
chicken scallopine caught my eye. I decided to give it a try and we loved it! It was "Kevin Approved" which means it was "hearty" enough. Please note, it is not low cal, as the chicken is cooked in oil and butter-but I did swap out the pasta that Ree paired with the chicken for steamed green beans
