Grain-Free Apple Cider Coffee Cake

It may not be apple season anymore, but it certainly is a season of renewal and good health. We’re letting go of winter and embracing SPRING and all things FRESH!

With that in mind, let’s talk about apple cider vinegar and how it can help “refresh” your body and support good health.

Apple cider vinegar is a fermented product made from crushed and aged apples; it’s a lifesaver when it comes to gut health and immunity.

Here are some reasons to use apple cider vinegar daily >>

  • The healthiest versions contain “the mother” (kind of like a kombucha mother scoby) which is a colony of beneficial bacteria

  • Aids in digestion

Okay, now that you know why it’s so good for you, let’s put it in a recipe. Here’s my apple cider “coffee cake”… and of course it’s gluten-free and grain-free. A sweet and sour buttery delight — enjoy!

Grain-Free Apple Cider Coffee Cake

Ingredients

  • 1 c. almond meal (or almond flour)
  • 1/4 c. coconut flour
  • 1/3 c. applesauce
  • 1 oz. dried apple, chopped
  • 50 grams vanilla protein powder (~2 scoops)
  • 2 Tbsp. apple cider vinegar
  • 1/2 Tbsp. nutmeg, ginger, and clove combined
  • 1/2 tsp. baking powder
  • 1/2 tsp. cream of tartar
  • 1/4 tsp. sea salt
  • 2 eggs
  • 1 tsp. liquid stevia (optional)
  • butter or coconut butter

Directions

  1. Mix your flour and dry ingredients first. Set aside.
  2. Whisk your egg and then fold in the grain-free flours.
  3. Add the applesauce and dried apple and mix again.
  4. Pour into a greased 9×9 pan. Bake at 350F for 15-16 minutes or so.
  5. Remove from oven and pour a little melted butter or coconut butter on top; let it cool.

Notes

  • You don’t have to use protein powder, but it does give it bulk. Sub any other flour there (about 1/4 cup).
  • If you like it more dry, remove the applesauce.
  • To make it sweeter, add 2-3 Tbsp. honey.
  • It’s great with yogurt or cream cheese!
