Well this is a Greek Fish Stew recipe for the slow cooker and I think this ranks up there with possibly the best thing I have ever made in my crock pot (some of my fave crockpot recipes are over here), it’s really really really good – my kiddos love it, mr bc loves it, it ticks ALL the boxes that I love to be ticked…and most of all I love it…you know when you are the chief chef and dinner maker and sometimes eating the darn thing, well you just get over it? That doesn’t happen with this…ever…
Those boxes that need to be ticked for a recipe to work for me? In a nutshell, it uses everyday ingredients, it’s super healthy, very easy, but bottom line it is tasty…there ain’t no point making anything, unless it’s tasty, right? Right.
It’s budget friendly too and you can use those frozen fish fillets – I am not a lover of those but I always seem to have a random packet of them lurking in the freezer and here, in a stew, they are a godsend…keep a pack in the freezer, defrost over-night or in some cold water just before and they work really very well…
1 large onion
5 large white fish fillets
1 leek sliced
1 carrot chopped
3 sticks celery chopped
1 lemon juiced & rind grated
8 cups fish or vegetable stock
handful mint leaves chopped
handful parsley leaves chopped
4 cloves of garlic
1/2 tsp saffron threads
1 can tomatoes
1. add all ingredients to slow cooker and cook on high for 4 -6 hours
2. serve with Greek bread
This is s super summery delicious happy dish that works rain or shine, nice in the Winter equally good other times of the year…we love it…it’s like eating the slow cooker version of a little cafe on the Meditteranean, glass of wine in hand, kids playing on the beach alongside, sunnies, little brilliant white buildings sitting on the hills, a big sunhat…you know all those things come out of a packet of frozen fish and a crockpot.
