Easy Christmas Potato Salad

Hello, for Love Your Christmas Home today I’m sharing today one of my oldest and most favourite Christmas recipes, it’s super simple, super tasty and very special – you can pull it out of your sleeve without too much effort and it will taste as if you have been standing for hours preparing when really you’ve been soaking in the bath with a glass of Christmas bubbles – my (and I know your) kinda recipe.

So here we go this is a recipe for Christmas Garlic Potato Salad, I first had this years and years ago on the patio of a French farmhouse deep down in the heart of the French countryside (yup there was rather a lot of vino involved), it’s been with me ever since – I’ve changed it up now and then but really it’s pretty much one of those recipes you don’t need to start messing with. And it’s also one of those recipes that you can bring to the table (or take to a gathering) at Christmas time (or for any special occasion) and it all just works…

The best thing about this is that there are three ingredients, I love and hanker after recipes with only a few ingredients in them, I don’t know why but there is something so very attractive about turning a few things into one big (very nice) thing…and somehow everything just feels so much simpler with a few ingredients, so for this, basically, you need potatoes, mayonnaise and garlic, and to throw in a sparkly bauble for good measure when you present it and you’re all good to go. How hard can that be?

Over the years I’ve tried many different mayonnaises (I know we all tend to stick to a fave brand, but I love to try out new ones too) and I don’t know about you but mayonnaise in a jar can sometimes be not the best – I think it’s when it’s made with powdered eggs that it just does not hit the right note…so for this recipe I used Praise Whole Egg Mayonnaise, it’s a premium mayonnaise and we loved it and it tastes amazing…plus Praise uses lovely Australian eggs, fresh local produce and is made right here in Australia – I love buying Aussie, you know that, say no more.

Easy Garlic Potato Salad Recipe

(amounts are for a small side dish – you may want to double or treble up)

500g small new potatoes

2 cloves garlic very finely chopped

2 very heaped tbsp Praise Whole Egg Mayonnaise

1. cook potatoes

2. dice potatoes

3. add potatoes, mayonnaise and garlic to bowl and mix to combine

4. season generously with salt and pepper & garnish with parsley
