Easy Christmas Recipe Shortbread

Aloha from Sydney, goodness I have been busy the last few days, lots of parties, gatherings and general Christmassy stuff, oh and a few trips to the beach too. Have Christmas tan on will travel.

How are you lovelies? I know some of you reading here are from colder climes, I’ve seen you all on instagram all wrapped up, cosy and chilly, are you loving that lovely white snow and sparkly frost? Chilly is not a word to describe where I am at the moment.

Last night we had a yearly party at a friend’s house, BBQ, drinks and standing around outside looking at pretty Christmas lights, lovely. We are hosting a party too soon – on the menu a spit roasted lamb on the bbq (we’ll get it going nice and early so it slow roasts all day), lots of nice salads & nibbles (we’ve worked it that guests are bringing most of the salads though I’ll be making a huge batch of the Christmas potato salad, recipe here if you’re interested), I’ll be going the ready-made route for desserts, more on that soon.

Anyway these shortbread biscuits are a lovely little Christmas tradition in this old cottage…you know what I am going to say here, really easy, simple simple recipe, quick to make, a lot better than the ones you get in the packets (though must say I do like those too, the good ones from Scotland) and most of all these are really nice to just whip up a batch pop them on a plate, douse with icing sugar, maybe the odd sprig of something green and serve with a cup of Christmas coffee after your bbq spit roast ;)

These make you look like you have Christmas all done and dusted, when in fact you are, with gritted teeth, asking your husband to wrap presents and stop talking about football ;)

Oh and this is a few ingredient recipe, who doesn’t love that?! Make them and then go get in a sparkly Christmas bath while said husband is wrapping presents with a beer.

Easy Simple Shortbread Recipe

2 1/2 cups plain flour

250g butter softened

1 cup sugar

1. mix all ingredients together (bowl or mixer)

2. gently kneed until it comes together

3. take tablespoons of mixture and roll into balls

4. press onto a baking tray lined with greased baking paper

5. bake 15 mins 200C

And that my friends is it. As simple as that. Lots of recipes use cornflour to make it shorter. Lots have more sugar. Lots have vanilla. I have though experimented and it has come down to these three little ingredients working together to taste good and make you look good.

Ok, I am flying out of here, errrm rather a lot to do ladies, though with said Christmas tan on am thinking stuff all that, text the guy in the red suit and ask him if he could perhaps double up on his efforts at and old tatty cottage on the beaches of Sydney this year…and head to beach tomorrow…what you reckon?
