Mom's Homemade Italian Sausage Skewer Recipe




Grilled or baked these are perfect to bring to any picnic! My mom always made her own sausage from scratch. She would make it in links. I just mixed and made the sausage mixture to put on skewers then baked them. Everyone went crazy over these and told me to never buy sausage in the store again! The easiest thing I ever made and go figure it's a huge hit. I have made the sausage many times but always took hours of stuffing it into casings not anymore this is a simple alternative and delicious!



My mom's sausage recipe:
2 to 3 lbs. of ground pork 1 tablespoon fennel seed 1 1/2 tablespoons paprika 2 teaspoons minced garlic 1 tablespoon olive oil 1 teaspoon or more of salt and pepper 2 tablespoons white wine
For sweet sausage use the above recipe and omit the cayenne pepper
For hot sausage add 1/2 teaspoon of ground cayenne pepper per pound.
Mix the ground pork in a bowl with all ingredients shape into loaves or egg shaped and stick a wooden skewer in the middle. Bake on 400 degree hot oven until browned on parchment paper or greased pan for around 30 minutes or until browned and starts too look crispy on the outside or cook outside by placing on a heated grill lined with tin foil that is oil sprayed and cook until crispy on the outside.  claudia lamascolo Author
