Fresh Raspberry Galette Recipe



Summer is a favorite time for me making fresh fruit desserts and raspberry was my Dad's favorite pie , a dessert I can only give him every tribute to. Here it is Dad, this one's for you where ever you are. Missing you everyday and I always cook with you in mind R.I.P. until we meet again I know you would have flipped for this one. One of my best memories with dad was when he would work day shift at Ma Bell (aka ATT) he would walk to work and back(we only had one car and mom would work take it to her work) on the way home he would pick up a pie from a local store across the street from St. Louis Church to bring home a Freihofer's raspberry pie once a week. We would both sit down and eat the whole thing together, many years ago and I love that tradition he set with me and it became my favorite pie too!

Fresh Raspberry Galette Recipe

2 pie crusts store bought or homemade
2 containers or fresh raspberries or blackberries
1 jar seedless raspberry or blackberry jam
granulated sugar
heavy cream or beaten egg white


Roll out the dough and place the fresh berries in the center. Top with warmed jam (not hot) just to cover the berries of choice. Fold the edges to the center crimping to keep the middle open. Brush with cream or beaten egg whites then sprinkle generously with sugar. Bake at 400 degrees preheated oven until browned around 40 minutes.
