Chocolate Peanut Butter Oatmeal Cookies


Here we are in the middle of Oatmeal Cookie Week. I've been on a little kick lately with the oatmeal cookie. I've been telling myself that because it's oatmeal cookies, they're healthy. Ha. Just let me live in my little delusion a while longer... there's still cookies in the cookie jar.

Who doesn't love a chocolate and peanut butter combo? I had to try this combo out before I called it quits on my oatmeal cookie obsession. These were good. They were a bit rich too. I couldn't binge on these quite like I did on the Cranberry and Almond ones. Still yummy though.

CHOCOLATE PEANUT BUTTER OATMEAL COOKIES

Ingredients: - 1 cup sugar - 1 cup brown sugar - 2 cups flour - 1 cup butter - 2 eggs - 1 tsp baking soda - 1 tsp salt
- 1/2 Tbsp vanilla - 3 cups oats - 1/2 cup milk - 3/4 to 1 cup peanut butter - 6 Tbsp cocoa

Directions:
- Combine the sugar, brown sugar, flour, baking soda, salt and cocoa in a large mixing bowl. Mix until well combined.
- Add in the butter, eggs, vanilla and milk. Combine.
- Fold in the oats until thoroughly mixed.
- Add the peanut butter. Mix into batter.
- Drop 1 inch balls onto lightly greased cookie sheet.
- Bake at 350F for 12 minutes.
- Cool on a cooling rack.
- Store in an airtight container.
