Ever since i got back on track with my weight loss I've been determined to stick to the Slimming World plan (roughly) as much as i can. It's been a long time since i first started SW so i do have a good idea of what meals i can eat and one's i can't. Seeing as though i'm feeling really motivated and in to my weight loss at the moment, cheating ins't an option but cravings still exist, most recently mine being pancakes. I could have easily gone out and bought ready made ones or a mix and my craving would be filled. But the guilt, ohhhh the guilt! So i set about finding one which would be SW friendly and i couldn't believe my luck when i found this one.
You will need:
- 35g porridge oats
- Half a muller light yogurt (although i used Aldi Brooklea vanilla fat free yogurt which is also free)
- 2 tbsp of granulated sweetener
- Two eggs
It's so easy to make these pancakes, here's what you need to do:
- Place your oats in a bowl and mix in your yogurt. You'll need to leave this in the fridge over night.
- In the morning, whisk two eggs in with the mix as well as your sweetener.
- Pre heat your frying pan with fry light and keep it on a medium heat.
- Use a ladle (or dessert spoon) to pour on your pancake mix.
- After a few minutes flip the pancake over to brown off the other side.
- Once golden brown, place on a plate with your chosen syn free accompaniment. I decided to go for frozen fruit which i kept in the fridge over night.
- And there you go, you have syn free pancakes!
My mix made four, as i like my pancakes quite thick. But the mix will probably make around 10 smaller ones if you'd prefer those instead. These are seriously so yummy, i didn't think they'd be as good as they are and it's certainly filled my pancake craving and i can't wait to make these again!
