I could eat just plain bacon every day, but here is one of my all time favorite bacon recipes: Warm Potato Salad with Bacon

Warm Potato Salad with Bacon

Recipe type: Side Dish Author: Connie Roberts Serves: 10
Ingredients

• 5 lbs. red potatoes
• 1 package of bacon
• 1 bunch of scallions

Instructions

1. Heat water to boil for potatoes
2. Wash and cut red potatoes into cubes (do not peel)
3. Fry bacon until crisp. Be careful not to burn.
4. Boil potatoes until soft.
5. Wash and cut scallions. Cut the white, more “oniony” parts smaller than the greens.
6. Cut bacon slices into small pieces.
7. Drain potatoes.
8. Add bacon and scallions.
9. Pour bacon grease and thoroughly.

Notes Please note: This serves 10 or more people if eaten as a small portion side dish. If you know you are serving “big eaters” add more of everything!
Serve warm right after cooking. If eating as a leftover, you can microwave a bit or just eat right out of fridge.

This potato salad was a big hit at my friends’ potluck dinners. I just had to get the recipe after I learned how easy it was to make. Now I share it with my family and friends. A large bowl is often finished off or if there are any leftovers, it’s one of the first dishes people ask to take home. I hope you give it a try!
