LASAGNA SOUP RECIPE


I really wanted to make the lasagna soup recipe I posted on Wednesday but I didn't have all of the ingredients. I modified it just a bit with what we had on hand and it turned out incredible! Honestly, I was a little skeptical about how it would turn out. Dang, y'all. I was so wrong. This is a new weekly staple for us in the fall and winter. We obviously left off the cheese topping to keep it dairy free for the kids. I just can't quite seem to shake myself free of the cow.



Lasagna Soup
1 lb of ground turkey
1 large can of diced tomotoes
2 cans of tomato sauce
4 tbsp of tomato paste
Fresh Basil
Ground Oregano
Bay leaves
1 box of armoniche pasta
1 box of chicken stock
Five Cheese Italian Blend Shredded Cheese
Ricotta Cheese
Olive Oil
Wine or Beer
1 tbsp sugar
2 cups of water

In a large dutch oven or stock pot, brown the ground turkey with a little bit of olive oil and oregano over medium heat. Once it's good and browned, reduce to low and de-glaze with beer or wine and stir to release everything from the bottom. Let simmer for just a minute. Add in your cans of tomato, diced basil, a bit more oregano, and a bay leaf. Cover and let simmer for about 30 minutes. Stir in a box of chicken stock and your box of pasta. Bring the heat up to a boil for about 15 minutes or until your pasta is cooked. Reduce heat and access your sauce. You might want to add in another 2 cups of water if the pasta absorbed all your liquid. Let simmer another 15 minutes. Spoon into an oven safe bowl and top with ricotta cheese and your Italian Cheese blend. Place in the oven to melt the cheese. Top with a bit more fresh basil and serve!
