lovely little recipe: summer fig appetizer

happy wednesday everyone! i’ve been radio silent over here working away on weddings and prepping for the 2014 season, so i apologize for the lack of posts around here! i wanted to pop in today though with a really yummy appetizer we made this past weekend for an impromptu BBQ. we hit up the farmers market on the way back from sonoma (where we had a wedding) and the prettiest looking figs were just calling our name. here’s how you can make this yummy snack:

summer figs with mint, prosciutto, goat cheese and honey

ingredients
1 pint sized box of ripe mission figs
goat cheese, not crumbled
fresh mint, torn in to small pieces
1 container prosciutto de parma (or your favorite proscuitto) – not mandatory if you’re looking to make this a vegetarian option
honey for drizzling – we used honey straight off the honeycomb and the pieces of honeycomb made it so decadent

instructions
1. rinse figs and cut stems off, then cut in half lengthwise
2. using a butter knife or cheese knife, cut small portions of goat cheese (about 1 tsp) and place on top of halved figs
3. add 1 piece of mint to each fig/cheese combo
4. pull off small slivers of prosciutto and wrap around figs
5. drizzle with just a tiny bit of honey
