Belgian Waffle Recipe

Where my soccer fans at?! I don’t follow soccer during the season but at World Cup time, I just get all swept up. It’s exciting, ya know? Kind of in a way similar to the Olympics; the whole world is tossed together in competition and you just have to pick your faves.

What I do find pretty fascinating, though, is the die-hard soccer fans who are glued to tvs, radios, phones, while the games are going on. Those peeps are just dying to know if their team will win. And did you know that you can look for predictions online?! Bing has a new tool where you can search your favorite team and their algorithm will tell you whether they’re expected to win! Crazy! Go to Bing Predict, type in “world cup predictions” and it’ll tell you which teams are slated to win, and the percentage of their accuracy. So fun.

Today according to Bing, Belgium has a 65% chance of winning over Algeria. So in their honor, I decided to finally share a recipe for the Belgian waffles that Mr. Lovely and I have been dying for ever since he got me a waffle iron for Christmas. These are going to change your world.

Ingredients

  • 2 c flour
  • 3/4 c sugar
  • 3 1/2 tsp baking powder
  • 2 eggs
  • 1 c melted butter
  • 1 1/2 c milk (we use skim, because that’s what’s usually on hand)
  • 1 tsp vanilla
  • topping options: berries, powdered sugar, syrup, etc.

Combine all dry ingredients (flour, sugar, baking powder) in a bowl and mix lightly.

Separate your eggs and set the whites aside; in one bowl, gently mix the yolks by hand for a few seconds.

Add milk, butter, and vanilla to the yolks and stir to mix.

Combine wet and dry ingredients and mix until smooth. The consistency will be a bit soupy at first but it tends to set up after a minute.

In a separate bowl, use a hand mixer to beat the egg whites into a froth until you have soft peaks forming. Fold the egg whites into the rest of the batter until combined.

Spoon a generous amount of batter into your waffle maker and cook according to your own maker’s instructions. I find that this batter needs an extra minute or so in the waffle iron.

Take out your waffles and add your favorite toppings! These tend to be pretty sweet, so we stay away from the syrup and just do berries or a sprinkle of powdered sugar.
