Cornflake Cookies



Cookies..I love them all! What is your favorite cookie?
I browsed through my Mom's old recipes and found this one that I have not made in a long time. I like finding old treasured recipes.
  • 2 cups flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 3/4 cup shortening
  • 1/2 cup sugar
  • 1/2 cup brown sugar
  • 2 eggs
  • 1 teaspoon vanilla
  • 1 cup old fashioned oats
  • 1/2 cup coconut
  • 1 1/2 cup cornflakes

  1. Whisk together first 4 ingredients and and set aside.
  2. In a medium sized bowl cream shortening and sugars till creamy. Add eggs and vanilla and mix until well combined.
  3. Stir in oats, coconut and cornflakes.
  4. Drop dough by tablespoonfuls on cookie sheets lined with parchment paper.
  5. Bake in 350º oven for 12 minutes.
  6. Cool completely on cooling racks. These cookies freeze well.
  7. Yields: 30
