Flatbread Tacos

Growing up in the southwest, I absolutely love Mexican food. My mom, dad and grandma all made tacos often, when we went out to eat it was often for Mexican food, and it was always something that everyone enjoyed. I make tacos a few times a month, and to keep it from getting boring, I am always looking for new twists on the classic. When my friends at Krusteaz sent me some of their new flatbread mixes to try, my daughter and I thought it would be fun to try making flatbread tacos.

They were delicious! I guess these are a bit more of a tostada than a taco, in that you don’t fold them up to eat them. We made these much like we make tortillas, and cooked them on the stove top in a pan, versus making the flatbreads in the oven. It worked out wonderfully!

These are a really fun twist on taco night. For tacos I love to set up a toppings bar and let everyone make theirs how they see fit. My girls are a little plain in their tastes, often going for just meat and cheese. My husband loves lots of tomatoes and salsa, and I am a sucker for guacamole. I mix it up a bit by changing what meats we use for the filling. Sometimes I’ll make my chicken in a crock pot (so easy!), other times I will make ground beef or turkey on the stove top, and I also love to add some seasoning to leftover shredded pot roast for a super easy taco night.

I didn’t try one, but I think these flatbreads would be great with some cheese sprinkled on top then popped in the oven for a flatbread cheese crisp. I think I might just have to try that next time, as I have some big cheese crisp fans in this house.

To make these I followed the recipe on the box (I used the Whole Wheat Flatbread Mix), let my dough rise, and then divided my dough into 10 pieces. Once divided I worked one flatbread at a time with my hands, shaping them into rounds about 4-6″ in diameter. Each flatbread went into a frying pan, that I had lightly brushed with oil, for about two minutes each side. If you’ve ever made homemade tortillas, it’s a very similar process.

Then all you do is pull them out of the pan, add your favorite toppings, and enjoy! There really are so many fun ways to use these flatbread mixes.

Flatbread Tacos

Approximately 10 flatbreads

Ingredients

  • Flatbreads
  • 1 Krusteaz Flatbread Mix, prepared according to package directions to the point of the dough rising.
  • Taco Fillings
  • Fillings of your choice which could include cooked ground beef, ground turkey, shredded chicken, pinto beans, black beans, cheese, lettuce, tomatoes, olive, guacamole, sour cream, salsa or whatever you enjoy putting on your tacos.

Instructions

Prepare flatbread mix according to package directions and allow to rise. Once dough has risen, separate dough into approximately 10 pieces. Place a skillet or baking pan on the stove, brush or spray lightly with oil and heat to a medium heat. Working with one piece of dough at a time, by hand shape the dough into a round, approximately 4-6" in diameter. Place into dough round into the heated skillet and cook for approximately 2 minutes, then flip with tongs, cooking the second side for 1.5-2 minutes, until lightly browned. Remove from pan and repeat with remaining dough. Serve immediately and top with favorite taco toppings!
