Waffle French Toast. (Paleo or Gluten Free/ Vegan Option)

Lazy sundays to me mean brunch. When I was in college my friends and I would get together and cook big breakfasts together, each person had their specialty. Someone was on scrambled egg , sausage, bacon, pancake, coffee duty, etc. My job was french toast. We would cook, laugh and reminisce about the past weekend. What I would give to go back to those days! Here I have created a wonderful gluten free, or vegan option for Waffle French Toast to relive my glory days! Since multi-allergen free bread that actually tastes good can be difficult to both make and come by- using my waffle recipe was an easy (and deliciously perfect) solution.

Pick first from one of my waffle recipes of choice, I have 3 versions:

A Paleo Recipe

A Paleo /Egg Free Recipe

Basic Gluten Free/Vegan Recipe (for those with nut allergies).

Then- select how you want to make your recipe using either the Classic Recipe or Vegan Banana recipe below:

Classic Waffle French Toast.

  • 8 Waffles
  • 4 Large Eggs
  • 2/3 Cup Milk (dairy or nondairy)
  • 2 tsp Cinnamon
  • A pinch of salt
  • a pat of Butter (dairy or nondairy)
  1. Begin by toasting your waffles slightly. Gluten waffles tend to absorb a lot of moisture, creating a very soggy french toast, so pre-toasting your waffles will help this to not happen).
  2. In a bowl mix together the eggs, milk, cinnamon and salt.
  3. Heat a pat of butter in a sauce pan over medium heat.
  4. Dunk one side of the waffle in the batter and place in saucepan.
  5. Pour some batter on non-battered side and then flip. * Its important that you don’t dunk both sides to begin with as the waffles can end up a bit soggy! *

Yields 8 French Toast Waffles.

Vegan Banana Waffle French Toast.

  • 8 Waffles
  • 2 Bananas
  • 3/4 Cup Milk
  • 1 1/2 tsp Cinnamon
  • 1 tsp Vanilla
  • a pinch of salt
  • a pat of butter or oil of choice
  1. Begin by toasting your waffles.
  2. In a bowl mix together the bananas, milk, cinnamon, vanilla and salt and mashing until mixture is smooth.
  3. Heat a pat of butter in a sauce pan over medium heat.
  4. Dunk one side of the waffle in the batter and place in saucepan.
  5. Pour some batter on non-battered side and then flip. * Its important that you don’t dunk both sides to begin with as the waffles can end up a bit soggy! *

Yields 8 French Toast Waffles.
