Foodie Friday: Vegan & Mayo Free Potato Salad!


I've decided that I'm just going to do the Foodie Friday posts every other week at the moment, I don't want to post just for the sake of posting! I want to write something worthwhile! But todays post is on something that I've been making variations of for years. I can't even remember now how I came up with it - probably combining things that needed using up! But it's very delicious and something I make at least a couple of times a month - if not more! Todays recipe showing my latest version that I'm liking at the moment, but feel free to play around with the flavours, it's very receptive!

Ingredients 1 cereal bowl of new potato's 1 tub hummus (I use plain usually, but flavoured is also good!) 1 tsp tomato puree 3 spring onions Spinach (I used 2 chunks of chopped frozen spinach) 1 tsp chives 1/2 tsp dried jalapeno powder (I bought from Tesco)


Method 1. Chop the potato's into small chunks and simmer on the stove until cooked - add in the spinach just before you're done cooking.
2. Stir in your hummus and tomato puree.
3. Then add your flavouring's, here I used chives, dried jalapeno and chopped spring onions (raw).
4. All you need to do now is eat! It's perfect served straight away hot (I often eat this as part of my dinner!) or cooled down cold the next day - I wouldn't recommend reheating though.



This also works really well with sweetcorn in it, but I didn't have any in when I cooked this batch up! Its also lovely made with Indian spices or even Moroccan flavours - the posibilities are endless, this is so receptive to different flavours!
