Honey Garlic Eggplant

Eggplant is not something I think of eating often, but I finally came across this honey garlic eggplant recipe I wanted to try. It’s simple and savory, and go so well with my bowl of white rice. Thanks to Stephanie of i am a food blog for this yummy dish! Her recipes are always full of inspiring yet easy to make dishes – and lots of Asian flavors. She is definitely one of my faves, so is her amazing cookbook!
