Ingredients (serves 4 to 6)
- 1 bunch fresh white asparagus
- 2 cups milk (1/2 l.)
- 2 cups water (1/2 l.)
- 1 1/2 cup polenta (250g)
- grated parmesan cheese to taste (I used approx. 1/2 cup)
- salt and peper to taste
Directions
1. Wash the asparagus and gently pat them dry.
2. Bring a large pot of salted water to a boil, drop asparagus in and cook about 8 minutes. Remove and drain.
3. In a pot, bring water and milk to a boil.
4. Reduce the heat to medium. Sprinkle half the polenta and stir (I used a wooden spoon) until it starts forming a paste (about two minutes). Then add the other half of the polenta and keep stirring for about 8 more minutes. Add the grated parmesan cheese plus salt and pepper to taste and stir for 2 more minutes.
5. Add the asparagus to the mix. You can either cut them into large chunks before adding them, or keep them whole.
6. Blend everything together.
