Easy Asparagus Polenta



I've been debating whether or not I should post a few recipes here. I wanted to, but as I mentioned a few times that I'm not a fantastic cook, I felt a little embarrassed. I ended up thinking that my very limited skills in cooking are exactly the reason why I should be posting recipes. I know firsthand that expert food bloggers' recipes are sometimes intimidating for bad cooks. I can't recall how many recipes I messed up because they were too complicated/long/hard for me. If you can relate, let me assure you one thing: if I can cook it, you definitely can cook it too.

This recipe is super easy, can be whipped up in twenty minutes no matter your skill level and actually tastes delicious (and springy). Hope you'll try it and enjoy it!



Ingredients (serves 4 to 6)
  • 1 bunch fresh white asparagus
  • 2 cups milk (1/2 l.)
  • 2 cups water (1/2 l.)
  • 1 1/2 cup polenta (250g)
  • grated parmesan cheese to taste (I used approx. 1/2 cup)
  • salt and peper to taste
Directions
1. Wash the asparagus and gently pat them dry. 2. Bring a large pot of salted water to a boil, drop asparagus in and cook about 8 minutes. Remove and drain. 3. In a pot, bring water and milk to a boil. 4. Reduce the heat to medium. Sprinkle half the polenta and stir (I used a wooden spoon) until it starts forming a paste (about two minutes). Then add the other half of the polenta and keep stirring for about 8 more minutes. Add the grated parmesan cheese plus salt and pepper to taste and stir for 2 more minutes. 5. Add the asparagus to the mix. You can either cut them into large chunks before adding them, or keep them whole. 6. Blend everything together.
