Mexican Street Corn



Dustin and I LOVE to BBQ, however the only problem is that we've been apartment dwellers for the past four years. So, owning and operating a grill has never been an option for us. This particular week however, we are house sitting and were given full reign of use of the grill. So, it was an obvious choice for dinner; BBQ!

Dustin is slowly becoming the grill master when it comes to the meats, but sides are my domain. A few months back, I had this amazing Mexican street corn at a local favorite, Taco Mamacita. I've been craving it ever since, so I scoured the vast amount of recipe sites to find a good match. The results were quite satisfying.


Here's how it's done. You will need:
  • 4 ears sweet corn, husks removed
  • 2 tablespoons oil
  • 1/2 cup mayonnaise
  • 1 tsp. chili powder
  • 1 tsp. garlic
  • Salt to taste
  • Freshly ground black pepper
  • 1 lime, quartered
First, coat each ear of corn with oil. Place on pre-heated grill. Allow each side to char, approximately 10 minutes of cook time. While cooking, mix together mayo, chili powder, garlic, salt and pepper. When corn is finished cooking, remove from grill and coat corn with mayo mixture. Serve with lime to drizzle over corn.
