No Bake Peanut Butter Marshmallow Bars

Looking for a simple treat to beat the Summer heat? These four ingredient No Bake Peanut Butter Marshmallow Bars come together in a snap! We loved the light texture and soft candy-like coating.

Sometimes I feel like we spend a lot of time during our children’s toddler/infant years wishing they’d just get a little bit older.

“If she could just SIT UP by herself for FIVE minutes…”

“If he could just use the toilet OMG I’m over diapers…”

“WHEN will she be out of a carseat??”

But I’m going to tell you something in case you don’t know yet — older kids come with their own set of problems.

Jon David is almost 10 and God love him, but Summer Vacation makes my brain hurt sometimes.

First off, there’s all the questions. Most of them hypothetical, and maybe you don’t know this about me, but those are my least favorite kinds of questions to ever exist.

Almost all of these questions involve “for the rest of your life”. Like, seriously. Here I am toting around a 23 pound toddler who has pooped her diaper twice in the last hour, threw broken Pop Tart pieces in my basket of CLEAN LAUNDRY, and screamed when I tried to set her down so I could pee without holding her on my lap, I’m being forced to decide which song I would choose if I could only listen to ONE SONG FOR THE REST OF MY LIFE.

My brain cannot even handle. Seriously, Summer…seriously.

I love my kids, I do. But I never wish for Lucy to be just a little older because I know better.

I think it’s at around age 6 when the problems become less physical and more mental. Instead of toting them around, loading and unloading from a carseat, helping bathe, helping dress, your weary bones get a rest.

But while those weary bones are resting? All the questions. Also? No privacy. None.

Babies don’t understand about what is on television. Big kids do. Sometimes Jon David is all, “Why do I have to go to bed, there’s no school tomorrow?” and I’m like “FOR THE LOVE I JUST WANT TO SEE WHAT HAPPENS ON GAME OF THRONES.”

If my son had it his way, I would not watch my own TV until midnight. Also, why are there so many cartoons now? All day, there is a channel with cartoons. Aren’t grown-ups the ones making all the television channels? Why are we doing this to each other, there should be some kind of rule?

Bigger kids also have a particular interest in the mail. I don’t know why this is, but it must disappear at around age 30 because I could care less about those envelopes in my mailbox. None of them are anything good, I can tell you that much.

For real, Summer. I want to stop talking about my mail.

If Summer has made your brain want to explode, I’ve got good news. These yummy treats can be whipped up in about 10 minutes and require only 4 ingredients! Butter, peanut butter, butterscotch chips, and marshmallows. Also? They taste like they were delivered from an Angel.

No Bake Peanut Butter Marshmallow Bars

Adapted from Butter Baked Goods cookbook

Ingredients

  • 11 oz bag butterscotch chips
  • 3/4 cup creamy peanut butter
  • 7 TBS salted butter
  • 5 cups mini marshmallows

Instructions

  1. Line an 8x8 pan with foil and spray with nonstick cooking spray. Set aside.
  2. Pour marshmallows in a large, wide bowl. Set aside.
  3. In a medium saucepan, melt the butterscotch chips, peanut butter and butter over medium heat, stirring constantly. Once the mixture is melted and smooth, remove from heat and let cool for 5 minutes, stirring occasionally.
  4. Pour mixture over marshmallows, folding until marshmallows are completely coated. Pour mixture into prepared pan. Refrigerate until chilled and set, a couple of hours.
