Christmas Confetti Bars

Don’t let their cute appearance fool you — these Christmas Confetti Bars can be thrown together in a snap!

I don’t mean to alarm you, but Christmas is basically in two weeks.

TWO WEEKS!!!

How does this even happen?? How? This was supposed to be my year. The year where I had all my shopping done, my wrapping completed, and was relaxing and ready to enjoy holiday cheer at least 2 weeks before Christmas.

Guess how many presents I’ve wrapped?

Negative three. I say negative three because I accidentally ripped a chunk of one of my new rolls of wrapping paper, so I actually have less wrapping paper than I started out with, and more gifts. My closet is literally like an episode of Hoarders right now. And what I’m hoarding is giant Amazon boxes full of presents.

I thought about just piling them all up and dumping them at one of those places that wraps gifts for you, but good gravy it isn’t cheap. I’d throw a sheet over everything and slap a bow on top before I’d pay someone $3 per gift. I mean, hello, just because I’m a hot mess behind schedule doesn’t mean I’m rich. You can actually be unorganized and broke, you know? It’s called being normal.

On the off chance that like me, you are scrambling to throw everything together and get your holiday cheer on, tuck this recipe in your back pocket for later. It’s super simple, super festive, and totes cray cray adorable.

Also, I never say totes cray cray, I just wondered if you were paying attention. Isn’t totes the worst word ever?

To make these yummy and festive bars happen, you need Pillsbury Holiday Funfetti Cake Mix and Holiday Funfetti Frosting — the frosting comes with sprinkles, so you’re covered!

I actually used two cans of Pillsbury Funfetti frosting — a can of Rudolph Red Frosting to frost the bars, and a can of green for melting and drizzling over the top. That step is up to you! If you just wanna go with one color of frosting, it all tastes the same in the end, and they’ll still be adorable.

Christmas Confetti Bars

Prep Time: 15 minutes

Cook Time: 15 minutes

Yield: 10-12 servings

Ingredients

  • 1 15.25 oz box Pillsbury Holiday Funfetti Cake Mix
  • 1 small box (3.4 oz) vanilla instant pudding
  • 2 large eggs
  • 1/2 cup vegetable oil
  • 1 or 2 cans Pillsbury Holiday Funfetti frosting

Instructions

  1. Preheat oven to 350. Spray bottom only of an 8x8 pan with cooking spray and set aside.
  2. In the bowl of your mixer, beat cake mix, pudding mix, eggs, and oil until a dough forms. Press the dough evenly into the bottom of your pan.
  3. Bake for about 15 minutes or so -- until the edges are barely golden and the bars are puffy and firm on top. Remove from oven and let cool completely on wire rack.
  4. Frost bars and sprinkle with included sprinkles. If using TWO frostings, frost bars and chill for about 30 minutes. Remove lid and foil from second can of frosting and microwave for about 15-20 seconds, until pourable but still a bit thick. Drizzle over frosted bars, then top with additional sprinkles.
