Rum Soaked Chocolate Covered Cherries

These Rum Soaked Cherries are simple to make and are the perfect addition to your next cocktail party!

So…how do you feel about rum?

Personally, I am good with it. I mean, wine is my drink of choice, but I have been known to get cozy with a good rum on occasion.

And by good, I mean whatever is in the low-ish range of the moderately priced rums. Cheap but not the absolute cheapest, if you know what I’m saying.

The only problem with stuff like rum is that I’m too dang old for it. I’m nearly 35 for Pete’s sake. Do you know what hangovers feel like when you are nearly 35?

They feel like you are dying, that’s what. A very literal slow, painful, and nauseating death. Also, toddler. Have you ever noticed that toddlers only sleep in on the days that it’s completely inconvenient? If I were to be hungover, I assure you that Lucy would be bright eyed and bushy tailed at exactly 5:45 am. But when the kids have 9 am teeth cleanings at the dentist? Yep. Sound asleep.

Life, people. I don’t even understand.

These little gems are perfect because you can eat just a couple and feel fine. Don’t get me wrong — they are stout. But they are really good, really pretty, and really fun!

These rum soaked cherries are perfect for holiday parties. Adult holiday parties, obviously. It goes without saying that these do not go within the reach of small children. Also, I have heard rumors that these make late night Christmas eve present wrapping and toy put togethering extra fun.

I mean…right?

To make them, all you do is soak some maraschino cherries in some rum overnight, dry off, then dip in almond bark. I like to dip mine in sprinkles or drizzle with additional melted white chocolate, but I’m just fancy like that. You can be plain if you want — they will still taste good.

Rum Soaked Chocolate Covered Cherries

Yield: 24 - 30 cherries

Ingredients

  • 1 jar (10 ounces) maraschino cherries (with stems), drained
  • 1/2 cup rum
  • 8 oz chocolate almond bark
  • (sprinkles, additional white almond bark for decorating, if desired)

Instructions

  1. Place cherries in a bowl and cover with rum. Cover and refrigerate overnight.
  2. Drain cherries and pat dry with paper towels, letting sit on paper towels for a few minutes to drain.
  3. In a microwave, melt almond bark according to package directions; stir until smooth. Holding stems, dip cherries in chocolate mixture, allowing excess to drip off. If desired, dip in sprinkles or drizzle with white chocolate.
  4. Place on waxed paper and let sit until set.
