Homemade Taco Bowls

Hello, taco bowls! This is one of Brian’s favorite meals to make for us. We’re big fans of Mexican food over here, probably because it’s so fast and easy to make. Making these homemade taco bowls give our regular burritos a new spin, while still using the exact same ingredients.

Ingredients:
Tortillas
Choice of meat - we used leftover ground beef
Beans - we used black beans
Cheese
Salsa
Toppings – we love lettuce, tomato, and red bell peppers

First, bake your tortilla shells. We use two Pyrex bowls that can go in the oven and shape the tortilla around them. (Don’t forget to spray the dishes so your tortillas don’t stick!) Bake for 10 minutes at 400 degrees. They’ll be nice and crispy and slightly golden brown.

While the shells are baking, prepare your toppings. This is Ellie’s favorite part! She loves to help take out all the veggies and munch of them while we wait. We always use canned black beans, but if you add a little garlic salt, cumin, and pepper, it gives it more of an authentic flavor. Mmm!

After your shells are done, add your toppings, and eat up! We love pairing this meal with some watermelon and Raspberry Crystal Light for a fresh, summery feel. A super easy, ten minute meal and this recipe is totally Ellie approved!
